In the names of classic dishes of Austrian cuisine, the word «Kaiser», that is, «emperor», is often found. This is a gastronomic legacy from the time of the numerous Habsburg dynasty, which ruled Austria for many centuries, and in its best times half of Europe. At court they always liked to eat, naming the most successful dishes after the Kaiser.

For example, there were two imperial schnitzels (Kaiserschnitzel) at once. One of them, according to the description, is very similar to the well-known Wiener Schnitzel: a well-beaten piece of juicy veal was successively dipped in flour, beaten eggs and bread crumbs, and then fried in a large amount of fat. But the second one is completely different from it: the prepared piece of veal was breaded only on one side and only with flour, after roasting it was put aside, and a little flour, broth and heavy cream were added to the pan, it was brought to a boil, filtered, capers and parsley were added , lemon juice and zest. The already fried schnitzel was again dipped into the imperial sauce (Kaiser Sauce) thus obtained — to warm it up. It was usually served with boiled rice and green peas.

Food for the highest table was often distinguished by both exquisite ingredients and virtuoso culinary technologies. The so-called favorite soup of the Kaiser (Kaisers Lieblingssuppe) was cooked in beef broth with veal tongues, chicken breasts, artichokes, cauliflower and mushrooms, and seasoned with thick, heavy cream and egg yolk. Or, let’s say, Kaiser’s sausages in a shell (Kaiserwursthen im Schlafrock): short sausages were really baked in puff pastry, only they took selected chicken and veal, smoked beef tongues, mushrooms, goose liver (replacing it with chicken was considered bad form) and some ground pistachios. It is noteworthy that these sausages were treated as a light snack or side dish for a more substantial breakfast dish.

If after a hearty breakfast it was supposed to go hunting, then a special hunting sandwich (Kaisers Jagdproviant) was prepared for this case. The crumb was scooped out of a long French baguette type bun, which was then mixed with small cubes of ham, smoked pork, beef tongues, pickled cucumbers and egg white from hard-boiled eggs. The yolks also went into action — they were rubbed through a sieve and soft homemade cheese, a little melted butter and anchovy paste were added, as well as mustard, salt and pepper to taste. All this was thoroughly mixed, and the original bun was tightly stuffed with the resulting filling.

Desserts also matched — say, Kaiserpudding was prepared with ground almonds, candied lemon, apricot jam and rum, there was also a special imperial cake (Kaisergugelhupf). It is clear that the Austrian emperors were also served special tea — Kaisertee: a liter of strong tea was mixed with the juice of three oranges and two lemons, a little vanilla liqueur was added, and this mixture of vitamins and aromas was poured into cups, decorating them on top with a kind of our mogul-mogul — beaten eggs with sugar and orange juice.

Exquisite court food was also matched by special tableware. Basically, it was handmade porcelain with a unique highly artistic painting. However, some circumstances of the daily work of the kitchen servants and servants at the table also affected the appearance of the imperial dishes. The kitchen was often located quite far from the dining room, and even more so from the banquet hall, to which it was not uncommon to carry ready-made meals across the street at any time of the year. Therefore, in order to maintain the desired temperature, special soup pots appeared with lids, but made of porcelain.

As a rule, the appearance of each new «Kaiser» dish was accompanied by some kind of romantic story. A classic example is Kaiserschmarren, which is often translated as «Kaiser pancakes», although in terms of cooking technology this is a typical omelet. As the legend says, once Emperor Franz Joseph, after a long and not very successful hunt, came across a poor forester’s hut. The bewildered hostess was able to offer only a modest omelet as a treat, and even that, under her hands trembling with excitement, fell apart into not very appetizing pieces. However, the high-ranking hunter was so hungry that he was very pleased with such a meal, and the unpretentious dish went down in history and in restaurant menus.

You can cook a real imperial omelet on your own. First you need to mix two eggs, half a glass of milk, a glass of flour and a tablespoon of sugar in a mixer, while it is better to beat the egg yolks and whites separately. Pour the resulting mixture into a frying pan with heated oil, the layer should be no thicker than a finger. While the bottom of the omelette is cooking, sprinkle a handful of raisins and a little cinnamon over its surface, then turn it over to the other side. Now the most important moment has come: with two forks you need to tear the omelet into shapeless pieces. It is served fried to a crisp and sprinkled with powdered sugar, sometimes accompanied by some kind of fruit and berry sauce.
